Abstract:Standardization and scaling are the development directions of China's beef cattle slaughtering and processing industry. The operational conditions of the industry affect the quality of beef cattle breeding and the quality of meat consumption in the market. This study conducted research on
domestic large-scale beef cattle slaughtering and processing enterprises and beef consumers, respec?
tively. The results indicate that the consumption of beef in China will further increase, with a trend to?
wards specialization and diversification in consumption patterns, and consumers have higher de?mands for beef quality. However, large-scale beef cattle slaughtering and processing companies in
China face challenges such as limited cattle supply, high prices, disconnection between carcass qual?
ity and market demand, and poor effectiveness in the conversion of technological achievements, all of
which contribute to the low production efficiency. In this study, the restrictive factors affecting the development of slaughtering and processing industry and the corresponding countermeasures were dis?
cussed.
