Abstract:Rare ginsenosides have shown promising therapeutic effects in the management of diabetes and its associated complications. This review provides an overview of the latest research progress in the biocatalytic transformation of rare ginsenosides. Furthermore, it summarizes their diverse roles in combating diabetes and its complications, including enhancing insulin sensitivity, preserving pancreatic islet β cells, promoting glucose uptake by peripheral tissues, and exerting antioxidative and anti-inflammatory effects. These findings serve as a valuable reference for the efficient conversion of rare ginsenosides and facilitate their application in the field of diabetes treatment.
